Red Stagg

We have been raising Red Deer (Red Stagg) here for almost as long as we have been here. We have 40 some animals in our herd now, and their popularity grows here every year, as we have bulls maturing. We do NOT mix our red Stagg with our Elk. Most preserves do, trying to get a bigger animal that they call a Red Stagg. Red Stagg bulls are smaller in body size and smaller antlers than an elk bull. You can distinguish a Red Stagg bull by the tell tale crowns at the top of his antlers with 2 or 3 or 4 points on his crowns. If he does not have crowns, then he is NOT a Red Stagg bull, I don't care what anybody tells you. He is an Elk bull if he has no crowns. Red deer meat is much favored by chefs throughout the world, because of its flavor, texture and the size of the cuts or meat as compared to the lesser deer, because of their body size. The Red Stagg bulls that we harvest here have a live body weight of between 600 and 700 lbs. The meat is a delicacy, and it is a hunt that you would never forget.
